Leiths Fish Bible
Written by former Leiths teacher C.J. Jackson, (now the manager of Billingsgate Seafood Training School) this book covers all types of fish and shellfish with recipes ranging from the classic e.g. Lobster Thermidor; to the contemporary e.g. Salmon with cucumber and fennel salsa.
Recipes are divided by fish groups with extensive chapters on shellfish as well as preserved fish and alternative types of fish are suggested in each recipe if the fish you need is unavailable. There is also detailed information on methods of preparation such as filleting, boning and home-smoking.
