Creative Gluten Free Cooking
We are delighted to welcome Adriana Rabinovich, Leiths Diploma graduate and author of The Gluten-free Cookbook for Kids, to lead this informative class. Using her knowledge and experience in baking, Adriana specialises in devising recipes with flavour and texture, so that following a gluten-free diet does not mean missing out on all the treats.
This class will focus on the wealth of different gluten free flours and grains and explore how best to use these to maximum effect in your cooking. With an emphasis on baking, the course will explore the different properties of flours like teff, chick pea and sorghum amongst others, using them in creative ways to develop healthy and tasty gluten free foods. This course is ideal for those seeking inspiration in the kitchen and looking for ways to eat a healthier gluten free diet.
Sample recipes include: Teff Bread, American Style Corn Bread, Potato Gnocchi, Buckwheat Cheese Straws, Cecina (a savoury chickpea cake), Amaretti Biscuits and a Hazelnut Cake.
What the day involves:
- All ingredients are provided and weighed out for you in advance
- Unless otherwise specified, classes are a combination of a talk or demo, then plenty of hands-on cooking
- Wine is supplied at lunch to accompany the meal you have cooked
- Any food not eaten can be taken home
- Unless otherwise stated, a light lunch is provided for classes where students have not cooked a meal
- A recipe booklet
- All guests are assisted by Leiths teachers
- We do the washing up
