Introduction to Italian Cookery

Courgette Pasta

This day long workshop is the perfect introduction to Italian cookery. The class will teach you about sourcing and identifying ingredients, selecting a menu and, most importantly, cooking a traditional meal from scratch.

The day starts with coffee and pastries followed by a demonstration of a traditional Italian bread, handmade pasta with three different sauces and a zabaglione. Then it’s time to roll up your sleeves and get cooking guided by the Leiths teachers who will teach you to cook several traditional Italian recipes, some of which you will enjoy for lunch (the rest can be taken home). You will go home feeling inspired and filled with the confidence to arrange a celebratory Italian feast.

Recipes covered in the practical session include:

- Almond and Pistachio biscotti

- Cracked black pepper pasta

- Pea and lemon risotto

- Aubergine and mozzarella with arrabbiata sauce

- Basil pesto
