Key Cooking Skills Evening Course

Rolling out Pastry

This is a practical ten-lesson course held weekly for people who are complete beginners, lack confidence in the kitchen, or want to learn basic skills properly. You will learn to interpret recipes, handle a variety of cooking equipment and understand technical terms, so that you can produce delicious food at home with confidence.

The emphasis of the course is on enjoyment of both the cooking and the classes.Students take home the dishes to serve two people most evenings.

Evening classes begin at 6.30pm and generally finish at about 8.30-9pm. The price includes a copy of Leiths Bible at £30.

Techniques covered

Knife skills, stocks and soups, egg cookery, fish and shellfish, meat preparation and cooking, baking, pastry making, breads and vegetable cookery.

Sample recipes

Tuscan white bean soup, scrambled eggs with smoked salmon on toasted bagels, salmon baked with sweet and hot crust, prawn pilaf, lamb tagine, chocolate and hazelnut cookies.
