Marmalades and Winter Preserves
Make the most of the jewel in winter’s crown by learning to make Seville orange marmalade. Available for a short time in mid winter, you can enjoy Seville oranges all year round once you have mastered the art of preserving. In this hands-on class, you will learn the essential techniques of fruit preparation, understanding pectin, identifying setting point, bottling and storage. You will also learn which year-round fruit are suitable as alternatives so that you can apply your knowledge to preserving throughout the year. Including tips on using jams and marmalades in cooking, this promises to be a fruitful day for cooks of all abilities.
The day starts with coffee and pastries followed by a short demonstration. You will go on to cook through the recipes in pairs. A light lunch will be served.
