In 1996, at the request of a Governor of an independent girl’s boarding school, Leiths devised the Basic Certificate in Food and Wine, a practical 5 term cooking course designed to run alongside a school timetable at sixth form level. Over the years the programme has developed and now includes a 12 week Basic Skills Course (often used as the new skill for Duke of Edinburgh Bronze) and two courses suitable for pupils in years 6, 7 or 8, the Preparatory Course ( 3 terms) and the Introductory Course ( 1 term).
Nothing is compromised in the content and quality of what is taught. Pupils gain confidence in a wide variety of practical skills which can often affect other aspects of life, such as time planning and organisation. At the end the 5 term course, the pupils take an exam devised by Leiths; they are awarded a Leiths certificate if they are successful. This can be used to find employment in a variety of family level cooking jobs. Should they decide to take up cooking professionally they would be eligible for the Two Term Diploma at Leiths School of Food and Wine.
Pupils are taught a large number of skills and techniques, such as knife skills, vegetable and meat preparation, baking and sauces, as well as undertaking practical tasks such as time plans for each practical session, menu planning exercises for their level of skill, what to look for when buying ingredients, and basic theory associated with the practical skills used in the course.
The home economics teachers from the schools participating in the franchise scheme attend a skills training course at Leiths which ensures that pupils at every school follow the same methods and techniques. Leiths provides all the course material, an annual workshop at Leiths, termly visits to see how students are progressing and substantial behind the scenes support.
