Baked Peaches with Strawberry Cream
This recipe is taken from Leiths Simple Cookery Bible
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves 4
150 ml double cream, lightly whipped
150 g ripe strawberries, hulled and chopped
4 ripe peaches
2 tablespoons Amaretto, or orange juice, if preferred
a little soft brown sugar
6 Amaretti biscuits lightly crushed
To garnish
A few fresh strawberries
To prepare ahead: Complete to the end of point 3, bake when required
- Preheat the oven to 180º/350ºF/gas mark 4.
- Gently stir together the strawberries and double cream.
- Cut the peaches in half lengthways and remove the stone. Place in a shallow ovenproof dish and sprinkle over the Amaretto and soft brown sugar.
- Place in the oven for 10 minutes or until just beginning ‘give’. Stir the Amaretti biscuits in to the strawberry cream.
- Place two peach halves on a plate and drizzle over a little of the juices from the bottom of the pan, place a large spoonful of the cream on the top or at the side of the peaches and garnish with the fresh strawberries.
