Baked Peaches with Strawberry Cream

 

This recipe is taken from Leiths Simple Cookery Bible

Preparation Time: 15 minutes

Cooking Time: 20 minutes

 Serves 4

 150 ml double cream, lightly whipped

150 g ripe strawberries, hulled and chopped

4 ripe peaches

2 tablespoons Amaretto, or orange juice, if preferred

a little soft brown sugar

6 Amaretti biscuits lightly crushed

To garnish

A few fresh strawberries

To prepare ahead: Complete to the end of point 3, bake when required

  1. Preheat the oven to 180º/350ºF/gas mark 4.
  2. Gently stir together the strawberries and double cream.
  3. Cut the peaches in half lengthways and remove the stone. Place in a shallow ovenproof dish and sprinkle over the Amaretto and soft brown sugar.
  4. Place in the oven for 10 minutes or until just beginning ‘give’. Stir the Amaretti biscuits in to the strawberry cream.
  5. Place two peach halves on a plate and drizzle over a little of the juices from the bottom of the pan, place a large spoonful of the cream on the top or at the side of the peaches and garnish with the fresh strawberries.
