Lime Cordial
This recipe is taken from Leiths Simple Cookery Bible
Ingredients
- 580g granulated sugar
- Grated zest and juice of 6 limes
- ½ teaspoon citric acid
- ½ teaspoon tartaric acid
- 2 teaspoons epsom salts
- 300ml boiling water
Method
- Place all the ingredients together in a large mixing bowl and leave overnight.
- Strain into clean glass bottles and store in the fridge until required.
