Radish and Red Onion salad with Pomegranate Dressing

A delicious spring salad, serve as an accompniment to meat (e.g. quail) or as a starter.

RADISH AND RED ONION SALAD WITH POMEGRANATE DRESSING

1 tablespoon pomegranate syrup

4 tablespoons olive oil

Salt and freshly ground pepper

½ teaspoon ground cinnamon

1 teaspoon soft light brown sugar

1 pomegranate

2 oranges peeled and sliced

2 bunches radishes

1 red onion

Fresh mint leaves to garnish

 

  1. Put the syrup and oil in to a salad bowl.  Season with salt, pepper and the cinnamon and sugar and whisk together.
  2.  Cut the pomegranate in half and ease out the seeds with a teaspoon handle or fork and add to the dressing.
  3. Wash and top and tail the radishes.  Slice them very thinly, using a sharp knife or mandolin.   Cut the onion in half and peel and slice very thinly.  Toss together with the fruit and dressing in the bowl.  Garnish with mint leaves just before serving.
