Nutrition in Practice

One day a week, Wednesday 19th April 2017 - Wednesday 28th June 2017

Study the essentials of nutrition while learning practical hands on cookery on this NTEC accredited course.  Working in the Leiths professional kitchens, you’ll experiment with ingredients such as spirulina and seaweed spaghetti, techniques such as fermenting and sprouting, and equipment such as the Thermomix, dehydrator, and sous-vide. You’ll then study topics such as portion control; managing food allergies and intolerances; the importance of blood sugar regulation in weight management and food trends of the future.

Essential Cooking Certificate: Evening Course

Every Tuesday and Thursday evening from 25th April - 29th June, as well as Saturday 22nd April, 20th May and 17th June 2017

We're thrilled to offer our Essential Cooking Certificate in a new part time evening and weekend format, ideal for those who don't have the flexibility to commit to full-time study. In this hands-on, fast paced professional course, you’ll learn everything from knife skills, fish preparation and butchery to choux pastry, pan sauces and bread making. At the end of the course, you’ll put your budgeting, kitchen management, menu planning and presentation skills to the test as you learn to cook for a crowd. Friends and family are invited to join you for a delicious sharing menu cooked by you and your fellow students.

How to Start Up a Successful Food Business

Thursday evenings from 19th January - 9th February 2017

Chris Barber brings his years of hands-on experience as a chef, hotelier, restaurateur and business adviser to bear in this four week evening course, providing you with a fundamental foundation in drafting business plans and cash flow, as well as financial planning and menu writing, helping you to create a successful business from a bright idea. Guest speakers will give an essential insight not only into their successes, but also into their mistakes and how to avoid them. From finding a location to marketing, branding, PR, this course will provide you with a clear road map to success. The final session will see you pitching your business plan to an experienced panel of ‘dragons’.

In the Mood for Healthy Food with Jo Pratt

In this popular class, Jo Pratt will show you how to reinvigorate your diet with dishes and tips from her latest cookery book, In the Mood for Healthy Food. Working in the spacious Leiths kitchens, you’ll create seasonal, fresh, nourishing, attractive dishes like Beef and quinoa meatballs, Tofu Fritters with ponzu dipping sauce, Flourless red velvet chocolate torte and Banana and date muffins. Your family and friends will be squabbling over seconds at your next dinner party!

Easy Gourmet with Laoise Casey

Wednesday 18th January 2017, 18.30-21.30 or Tuesday 14th March 2017, 18.30 - 21.30

Learn to create healthy, restaurant-quality comfort food at home! In this hands-on workshop, Laoise will teach you the techniques used by famous restaurants such as The Dairy to elevate simple dishes beyond the everyday. You'll create deliciously healthy, nutritionally-balanced comfort dishes like Pitta breads with spicy chicken, coriander pesto, turmeric pickled cauliflower and homemade yoghurt, Smoked sausage and butterbean soup, Smashed jersey royals with capers and crispy fish, Jerusalem artichokes with red onion, goat's cheese and hazelnuts, and Frittata with caramelised leeks, mascarpone and green vegetables.

Wednesday 29th March 2017, 10.00 - 14.30

Learn an array of tips and techniques from the experienced Leiths chefs whilst perfecting a menu that elevates healthy eating to a new level. Your healthy repertoire will be filled with dishes such as Pan-fried mackerel fillets with avocado, red onion and jalapeno salsa, Baked sumac chicken with sweet spiced kasha, Greek parsley salad with pistachios and mandarin oil and Warm rose syrup figs with yoghurt berry gelato, setting you on the perfect path for healthy eating in 2017.
