Due to the coronavirus outbreak Leiths has made the difficult decision to cancel all planned courses (except our online courses) until the end of June. In these exceptional circumstances all students who have booked places on our courses will be offered the opportunity to cancel or reschedule their course. If you are currently in the process of taking a multi-part course, you will be offered new dates to complete the course later in the year. Of course we will be dealing with a high volume of calls and emails and we thank you for your understanding and patience during this unsettling time. American Style Pancakes

American Style Pancakes


225g plain flour
1 pinch of salt
3 tsp white sugar
2½ tsp baking powder
2 eggs (beaten)
30 grams butter (melted and cooled)
300 ml milk
A little butter for frying
Blueberries and maple syrup to serve


  1. Sift the flour, salt, sugar and baking powder into a bowl and then make a well.
  2. Add the beaten eggs, melted butter and milk and stir in the centre of the well gradually drawing in the dry ingredients to create a smooth batter.
  3. Transfer to a jug.
  4. Melt a small nut of butter in a non-stick frying pan and allow to foam.
  5. When the butter is foaming pour in some of the pancake mix to approx. 10cm diameter.
  6. When the upper side of the pancake starts to bubble you can start to flip the pancakes and finish cooking on the other side. This will take a couple of minutes.
  7. Serve with blueberries and maple syrup.
