How to posh up your beans on toast

Something we're all used to having in the store cupboard; a trusted tin of baked beans. However this may not be the case at the moment, but don't fret, we're here to help satisfy your craving for the nation's much-loved beans on toast. Could our tomato, paprika and borlotti beans even beat the familiar taste of Heinz?

Ingredients

Serves 4

Tomato, Paprika and Borlotti Beans

1 Tbsp rapeseed oil (for frying)
1 small onion
1 clove garlic
1 -2 tsp smoked paprika
1 x 400g tinned borlotti beans (change in for any other bean), drained and rinsed
1 x 400g tinned tomatoes
1 x chicken/vegetable stock cube (or 100ml fresh stock)
½ tsp of caster sugar
Salt and freshly ground black pepper

Optional extras to enrich the base:
½ tbsp tomato puree
½ tsp fresh leaves or dried thyme
½ tsp chilli flakes
½ Tbsp black treacle

Instructions

  1. Finely slice the onion.
  2. In a medium pan add the rapeseed oil, onion and a pinch of salt. Place on a low/medium heat, stir occasional until softened (15 mins approx.)
  3. Crush or finely chop the garlic.
  4. Add the garlic and smoked paprika (and other optional spices/ingredients if using) and cook for 1 minute.
  5. Add the drained and rinsed borlotti beans, tinned tomatoes, stock cube/fresh stock, stir well scraping any ingredients from the bottom of the pan.
  6. Bring the bean base to the boil and then turn down to a simmer until well reduced, thick and syrupy.
  7. Taste the sauce and season with salt, pepper and sugar and adjust consistency as desired. Remove from the heat. Reheat for serving if not being used straight away.


Serving suggestions:


  • Serve as homemade beans on toast (great with a sprinkle of feta if you have it)
  • A side dish for fish, pork, lamb, beef, chicken, halloumi or roasted cauliflower
  • Turn into a chilli - Fry off and add mince, further spices (chilli and cumin) and a few pieces of dark chocolate if you can spare them!
  • Thin down the base with water and serve as a soup, could also be a blitzed soup
  • Freezes well
