Those who've been keeping an eye on our Instagram, Twitter and Facebook pages will have seen that we've spent the day demonstrating at the wonderful Borough Market in South East London. 

The market's demo kitchen is located in the Market Hall, a beautiful greenhouse-style structure, which today was flooded with glorious sunshine and filled with foodies. These free demonstrations occur every Thursday and Friday from 12:30 until 2pm, with a schedule that runs from April through to December each year. 

The demos are performed by numerous visiting chefs and cover a panoply of skills, ingredients and cuisines. We were thrilled to make our debut there today (21st July 2017) with Leiths teacher, Eithne Neame, at the helm. 

To say that Eithne is a dab hand when it comes to seafood would be an understatement; having taught at both Leiths and Billingsgate Seafood Training School, it truly is her specialism. 

It was a treat to be able to use produce from the market's amazing traders. We bought our sea bream and wild salmon from Furness Fish & Game, prawns from Shellseekers Fish & Game, Sussex squid from Sussex Fish, spices from Spice Mountain, and fresh herbs and veg from Turnips.

With the ingredients above, Eithne whipped up the following globetrotting feast:

  • Pan-fried squid with chickpea, tomato, olive and chilli salad
  • Prawn laksa with Thai basil and lime
  • Sea bream en papillote with ginger and galangal
  • Japanese style marinated salmon with cucumber salad

We'd like to say a big thank you to Borough Market staff and traders (for having and helping us), the crowd of food-lovers (who eagerly tasted, sniffed, enthused and questioned their way through the afternoon) and, of course, Eithne for sharing her skills.
