Mu-Shu Pork on Little Gem Lettuce

Mu-Shu Pork on Little Gem Lettuce

Taken from the Leiths Meat Bible, you can serve these either as a starter or a main course.

Ingredients

Makes about 12 canapés, or serves 4 as a main course.


1 tablespoon vegetable or groundnut oil
100 g minced pork
50 g shelled raw prawns, finely chopped
1 small clove of garlic, crushed
1 red chilli, deseeded and finely chopped
2 tablespoons finely chopped carrot
2 spring onions, finely chopped
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon light brown sugar
pinch of five-spice powder
1 tablespoon chopped fresh coriander leaves
salt
small leaves from 2 heads of little gem lettuce, washed and dried, to serve


Instructions

  1. Heat the oil in a sauté pan and cook the pork and chopped prawns until cooked through, about 5 minutes.
  2. Stir in the garlic and chilli and cook for a further minute.
  3. Stir in the remaining ingredients, except the lettuce
  4. Set aside to cool, then chill until required.
  5. To serve, place the lettuce leaves on serving plates, cup-side up, and divide the pork mixture between them. Serve at room temperature.
