Summary Chinese Cooking with Ching-He Huang (Vegan Friendly)

"One of the great ambassadors of Chinese cooking, Ching writes recipes that everyone can have a go at and enjoy." - Tom Kerridge

We're delighted to welcome Ching-He Huang back to Leiths for her popular, hands-on masterclass in which students will learn to cook an amazing array of delicious Chinese recipes.

Due to the amount of travel required by her work, this is currently Ching's only class in the UK and is therefore an exclusive opportunity to cook with and be taught by the celebrated chef.

Ching is one of the most influential voices in Chinese cookery and has appeared on TV both in the UK and USA. She has a monthly slot on ITV's Lorraine, has featured regularly on BBC One's Saturday Kitchen and presented BBC Two's Exploring China alongside Ken Hom.

With help from Ching and the Leiths teachers, you'll learn how to achieve the distinctive flavours and textures of beloved Chinese dishes such as Sichuan smoked tofu gan and Wok-fried spicy spring onion salsa verde.

The class on Saturday 10th November will focus on vegan dishes, introducing you to recipes that vegans, vegetarians and meat-eaters alike will want to cook again and again. As well as the following recipes, Ching will explain how tofu is made, what the difference is between the numerous varieties of tofu and how to make soybean noodles.

Class structure

Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently – whatever the ratio, there is always more than enough food, and often food to take home too (foil containers and bags provided).

Your day will comprise of a mixture of hands on cookery and demonstrations performed by the chef who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs,  their  individual teaching style.

Unless otherwise stated, you will be eating the food that you have cooked during your class for lunch, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

Allergies and dietary restrictions

Please call the school to discuss any relevant allergies with a member of staff. You can read our full policy on allergies and dietary restrictions here.
