Summary Comforting Soups and Stews

With autumn and winter fast approaching, we all need some warm, comforting dishes to turn to when the cold weather starts to bite.

You’ll learn how to cook seasonal, nourishing dishes such as a hearty Chorizo and chestnut soup with saffron and paprika and succulent beef cheeks, slowly cooked in red wine with mushrooms, topped with crispy dumplings. You’ll also make a delicious soda bread which cooks in no time; ideal to accompany soup at the end of a busy day, or to simply be enjoyed toasted with plenty of melted butter.

The dishes chosen for this course have a few twists enabling you to elevate a simple supper dish into a flavoursome winter feast for friends.


  • Chorizo and chestnut soup with soda bread
  • Lamb neck fillet with prunes, chilli and coriander and jewelled rice
  • Slow cooked beef cheek with horseradish and thyme dumplings (demonstration)

Class structure

Your day will comprise of a mixture of hands on cookery and demonstrations performed by the Leiths tutors. Unless otherwise stated, you will be eating the food that you have cooked during your class for lunch, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What is included:

  • Refreshments on arrival
  • A recipe booklet
  • All ingredients provided and weighed out for you in advance
  • Lunch of your own making or sharing platters prepared by the school, both with Louis Latour wines
  • We do the washing up!

What you need to bring:

  • Flat soled shoes
  • Long trousers and a long sleeved top are advisable

Allergies and dietary restrictions: We are happy to make adjustments where possible. Some classes are however unsuitable for people with particular intolerances – where the menu would need to be completely different.
