Summary Comforting Soups and Stews

On this hands-on cooking course you’ll learn how to cook seasonal, nourishing dishes whether it be celebrating spring's wild garlic to create a delicious soup accompanied by smoked haddock and tasty coconut yoghurt flatbreads, or a delicately flavoured Iranian vegetable spiced stew which can be easily adapted to suit whichever vegetables are in their prime.

In the autumn months you'll explore dishes such as hearty chorizo and chestnut soup with saffron, paprika and succulent beef cheeks, topped with crispy dumplings. You’ll also make a delicious soda bread which cooks in no time; ideal to accompany soup or to simply be enjoyed toasted with plenty of melted butter at any time of the year.

The dishes chosen for this course have a few twists enabling you to elevate a simple supper dish into a flavoursome and refined feast for friends.

Menu spring/summer

  • Wild garlic and smoked haddock soup with coconut yoghurt flatbreads
  • Braised pork cheeks with apple compote and a walnut crumb
  • Iranian vegetable stew (demonstration)

Menu autumn/winter

  • Chorizo and chestnut soup with pearl barley and soda bread
  • Lamb neck fillet with prunes, chilli, coriander and jewelled rice
  • Slow cooked beef cheek with horseradish and thyme dumplings (demonstration)

Class structure

Your day will comprise of a mixture of hands on cookery and demonstrations performed by the Leiths tutors. Unless otherwise stated, you will be eating the food that you have cooked during your class for lunch, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What is included:

  • Refreshments on arrival
  • A recipe booklet
  • All ingredients provided and weighed out for you in advance
  • Lunch of your own making or sharing platters prepared by the school, both with Louis Latour wines
  • We do the washing up!

What you need to bring:

  • Flat soled shoes
  • Long trousers and a long sleeved top are advisable

Allergies and dietary restrictions: We are happy to make adjustments where possible. Some classes are however unsuitable for people with particular intolerances – where the menu would need to be completely different.
