We are thrilled to be working with Masterchef 2017 winner Saliha Mahmood for an exciting new class exploring Indo-Persian cuisine.

A unique journey into Indo-Persian cookery, this class will involve learning about the region's rich culinary history with the opportunity to recreate dishes taken from Saliha's cookery book, 'Khazana', which translates to 'treasure'.

The class will start by introducing some of the fascinating historical influences that have shaped the food of the region, followed by a demonstration in how to make paneer and how it can be used at home. The class will also involve a taste test platter, experimenting with the use of of roses in the Indo-Persian cuisine, a spice and herb identification test, and more.

Typical recipes taken from Khazana may include:

  • Tachin - Persian rice cake
  • Rose scented chicken and Rose shorba
  • Paneer, radish and mung bean paratha
  • Kachumber salad

Class structure

Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently – whatever the ratio, there is always more than enough food, and often food to take home too.

Your day will comprise of a mixture of hands on cookery and demonstrations performed by the chef who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.

Unless otherwise stated, you will be eating the food that you have cooked during your class for lunch, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What you need to bring:

  • Flat soled shoes
  • Long trousers and a long sleeved top are advisable

Saliha Mahmood-Ahmed

Saliha Mahmood-Ahmed was winner of the prestigious BBC MasterChef UK competition in 2017. She has gone on to win 'Best Chef' at the British Restaurant Awards in 2018 and has written a bestselling debut cookbook 'Khazana' which celebrates the opulent food history and culinary delights of the Mughal Empire.

The delightful flavour pairings of saffron and rose jam, nutmeg, pungent chilli, dried fruits and nuts, fragrant barberries and rice are all celebrated in her cookery class which offers not just delicious food, but a glimpse into an exotic Indo -Persian past.

Saliha is also an NHS doctor training to specialise in Gastroenterology, with a focus on the treatment of Digestive disorders.
