Join Leiths alumna, Asian cookery expert and Radio 4 regular Angela Malik to discover the secrets of Indian hospitality.
In this exciting new hands-on class, you'll make classic dishes that can be shared and enjoyed, using authentic ingredients and traditional techniques to create something really special.
Referring to her map of India, Angela will talk you through notable regional specialties. She will introduce you to the five key spices in Indian cookery and explain how to use them, and she will delve into the history of each dish as you cook.
Typical recipes may include:
- Everyday Masala base
- Tandoori Lamb Tikka
- Hari Chutney (Mint and Coriander Chutney)
- Flaky Parathas
- Punjabi chicken curry
- Slow cooked black dhal

Class structure
Your class will comprise of a mixture of hands on cookery and demonstrations performed by the chef who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.
Unless otherwise stated, you will be eating the food that you have cooked during your class for dinner, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What is included:
- Refreshments on arrival
- A recipe booklet
- All ingredients provided and weighed out for you in advance
- Lunch of your own making or sharing platters prepared by the school, both with Louis Latour wines
- We do the washing up!
What you need to bring:
- Flat soled shoes
- Long trousers and a long sleeved top are advisable

We are happy to make adjustments where possible. Some classes are however unsuitable for people with particular intolerances – where the menu would need to be completely different. Angela Malik
Former Leiths Diploma student Angela Malik has established herself as a successful teacher. She is known for combining exciting flavours with fantastic, seasonal British ingredients and is a recognised expert of Asian food.
Angela has appeared as a regular panellist on BBC Radio 4 the Kitchen Cabinet and on shows such as C4 Sunday Brunch, ITV This Morning and Kirstie Allsop’s Perfect Christmas.
Angela was brilliant - she gave us more knowledge that just "this is how you cook this particular dish". The knowledge about the 5 taste sensations and how techniques that you can't really write down but only teach in person was invaluable. It was brilliant being in a room with people who were as passionate and interested in cooking as me. I'd come again no questions asked, especially if Angela was the teacher! Thanks chef!
