This fun packed, one week introduction is perfect for teenagers with a passion for food and ideal for those heading to sixth form or into the working world. The week is filled with practical tips and techniques for the budding chef and ends with the Invention Test, a fun cook off in which students will creatively explore their new found skills.

Including indispensable techniques such as cooking fish, preparing a Sunday roast with all of the trimmings, sharing classics such as Chilli con carne and creating irresistible puddings such as Chocolate roulade and Peach Melba crumble; this is the one stop shop for a first foray into cooking.   

This course is for 15 - 18 year olds. 

Sample recipes:

  • Salmon baked with a rocket pesto crust
  • Lamb wraps with harissa dressing and tzatziki
  • Fresh pasta
  • Sirloin steak with green peppercorn sauce
  • Chocolate roulade
  • Scones with jam and cream

Class structure

Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently – whatever the ratio, there is always more than enough food, and often food to take home too (foil containers and bags provided). 

Your day will comprise of a mixture of hands on cookery and demonstrations performed by the chef who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs,  their individual teaching style.

Unless otherwise stated, you will be eating the food that you have cooked for lunch, usually with elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What is included:

  • A Leiths apron
  • A Leiths How to Cook book
  • A recipe booklet
  • All ingredients provided and weighed out for you in advance
  • Lunch of your own making or sharing platters prepared by the school
  • We do the washing up!

What you need to bring:

  • Flat soled shoes
  • Long trousers and a long sleeved top are advisable
  • A pad and pencil

We are happy to make adjustments where possible. Some classes are however unsuitable for people with particular intolerances – where the menu would need to be completely different.
