Step by step

1 Cut the chilli in half lengthways through the stem. Scrape away the seeds and pale ribs with a teaspoon and discard (if extra heat is required, leave the seeds and ribs in).

2 Make parallel cuts down the full length of the chilli, keeping the stem end intact. For fine dice, make the cuts as close together as possible. Now holding the stem end, slice across the chilli.
